Chicken with Dates & Other Yumminess!

This is a fantastic one. And oven roasted brussels sprouts with dates is just such an incredible combo. You will see my Viking.

Servings: 1

Ingredients
  

  • Drizzle of olive oil/rapeseed oil/coconut oil
  • 1 chicken breast cut in cubes
  • 1/2 sweet potato cut in 1cm cubes
  • 40 g feta
  • 2 tsp green pesto
  • 8 salted cashews
  • 8 brussel sprouts halved
  • 6 dates quartered
  • Season with smoked paprika powder
  • Season with Dunn´s river Chicken seasoningor any other chicken/all purpose seasoning
  • Season with salt & pepper
  • 1/2 red onion, cut in thin slices

Method
 

  1. Oven to 200, put the sweet potato cubes, the red onion and the brussel sprouts into an oven dish, drizzle over olive oil, the smoked paprika and salt and pepper. Then into the oven.
    Chop the feta and the cashews really finely and into a bowl. Add the green pesto and the chicken seasoning and mix well together. Then add the chicken cubes to the mix. Again mix it all together.
    Mix to an oven dish, add salt and pepper, and into the oven when the potato mix has been in the oven for 15 min.
    All stays in the oven for another 25 min. Add the dates to the potato oven dish when there are 10 min left.
    VEGGIE OPTION:  100g of tofu, use paper towels to dry up the tofu, cut in cubes and prep like the chicken.
