- Drizzle of olive oil/rapeseed oil/coconut oil
- 1 tuna steak, approx 150g
- 1 tbsp green pesto
- 10 cashews, chopped
- Handful of kale
- 1/2 avocado
- Season Cajun powder
- Season salt & pepper
- 1 lemon, squeeze the juice over
Pre-heat oven 180. Tuna to a tray, add the oil, the juice, the cajun powder and salt & pepper.Into the oven, cook for 4 min, then turn and cook for another 4 min.While the steak is cooking, finely chop the cashews and mix with the pesto. Cut the avocado into slices.Lastly, drizzle of oil to a pan, and sauté the kale, will be quick, until its little brown on the ends and crispy.Kale to a plate, at the tuna steak, then avocado on top, and finally the pesto and the cashews.
