- 1 salmon fillet
- 1 lemon sliced
- 1 fennel cut in strips
- 1 sweet potato
- Season withsalt & pepper, and/or any seasoning you like
- Drizzle of olive oil/rapeseed oil/coconut oil
- Drizzle of teriyaki or sweet & sour sauce if you fancy
Peel the potato and cut into cubes. Oven on 180, drizzle the oil onto an oven dish, potatoes on top and mix with the oil, salt and pepper, and into the oven.Drizzle oil on to another oven dish (if you only have one, you can just then make space in the middle of the potatoes and add everything there), place salmon on to it, then the lemons on top of the salmon along with the fennel (around the salmon). When the potatoes have been in the oven for 25 min, add the rest in. Cook for another 15 min. Take out, plate up and drizzle over the sauce if you fancy.Done. Enjoy! The cooking time is because the sweet potatoes take a while to be perfectly crunchy. So put them in, chill and then the salmon and rest take no time.
