Breaded Chicken Heaven

Oh this one!!! You will love the taste of the pickled red onions with the spicy mayo and chicken together.  Raven and I have this one very often, and what we do is that we cook few portions of the chicken and of the pickled red onion, and leave in the fridge. Then next time it’s super quick to prepare. And when you have good healthy food already in the fridge, it is so much easier to eat well. So I would definitely recommend you doing that, as I know you will be having this often. Yum!

Ingredients
  

  • Drizzle of olive oil if you are using oven/ spray oil if using an air fryer.
  • 2 chicken mini fillets
  • Handful of grated cheese
  • 1/2 red onion, thinly sliced
  • 1/2 avocado
  • 1 tortilla wrap
  • 250 ml water
  • 125 ml apple cider vinegar
  • 1 tbsp sugar
  • 1 medium egg
  • Handful of flour, a good bowl bottom fill
  • Handful of breadcrumbs, a bowl bottom fill of it , any that you get in your local is fine.
  • Season with paprika powder
  • Drizzle of spicy mayo
  • Season with chicken seasoning, all purpose seasoning, any you like ( I use adobo or dunn´s river
  • Season with southern fried seasoning

Method
 

  1. Pour the water into a pot, add the vinegar and sugar. Bring to boil. Stirring. Place the thinly sliced onion into a bowl, remove the pot of the stove and pour ingredients over the onion. Leave until heat is gone, then use a strainer to drain the onions.
    Three bowls. Flour and all the spices; good sprinkle of each, in one, whisked egg in the next and breadcrumbs in the last and add the spices there as well. Take the mini fillets and coat them in flour, then dip them in the egg and finally coat them in the breadcrumbs.
    If using air fryer: Chicken in, spray oil on it, and cook for 6 min on each side. Pan: oil to pan, when it’s hot add the chicken and cook for 6 min each side. If browning to quickly, lower the heat a bit.
    Small pan, medium heat, add the tortilla. Then add first the grated cheese, then the chopped avocado, then the chicken, the red onion comes on top with a good drizzle of spicy mayo. Close the tortilla and remove when hot. All this only takes a few minutes.
    On to a plate and what did I tell you?! It is fantastic!
    again, with the spices, you can use any chicken spice, and everyday seasoning.
