
Chicken with Rice & Black Beans
Another gorgeous recipe from Raven. Like all of the recipes, this one is also fantastic to cook once, eat twice, easy to keep in the fridge and just throw in the microwave!

Ingredients
- Drizzles of olive oil/rapeseed oil/coconut oil
- 1 chicken breast diced
- 1 lime; the juice of it
- 1/2 an orange; the juice of it
- 3 cloves of garlic
- 2 tsp cumin (1 for zip lock bag, 1 for the black beans
- 1 tsp chilli powder
- 1 tsp oregano
- Season salt & pepper
- 1/2 a can of black beans
- 1 tsp paprika (for the black beans)
- 75 g of Basmati rice
- 1/2 brown onion
- 1/2 chicken stock cube
Method
- Put the chicken pieces in a zip lock bag. Add the seasonings and the juices. Mix and let marinate on the side.Wash the rice until the water runs clear. Then put the rice in a pot with oil and salt and pepper.The water in the pot should be the double amount to the rice. Great hack to do: add chicken cube chopped finely in with the water. Bring to boil then reduce heat and let simmer for 30 min.While the rice is simmering, oil to a pan, and place the chicken on to it and let cook on a medium heat.Drain the black beans and put in to a pot with the garlic, the onion, cumin & paprika. Low heat. Cook until the rice is ready, no water is left and the chicken is cooked through.
