
Cod Goodness
Cod always reminds me of Iceland and being little. We ate A LOT of cod. Still really like it, I mean, if it aint broken, why fix it? But I have improved it, making it more delicious with spices and the right mix of ingredients with it.

Ingredients
- 60 g halloumi, cut into 1cm cubes
- 6 closed-cup mushrooms, sliced
- Season with salt & pepper
- Handful large of spinach
- Season with Red adobo all seasoning
- 1/2 a red onion, thinly sliced
- Drizzle of olive oil/rapeseed oil/coconut oil
- 1 clove of garlic, chopped
- 2 small cod fillets
- 1/2 an avocado, peeled and sliced
Method
- Preheat the oven to 200C/180C fan/gas 6.Spread the oil on a baking tray, add the halloumi and mushrooms, and season with salt and pepper. Place in the oven and cook for 10–15 minutes, until soft and golden, adding the spinach to the tray for the last minute.Oil to pan, then add the red onion, the garlic and the cod. (season it first.) Cod first skin side down, cook for 3 minutes, turn and cook for further 3 min.Add the spinach to the pan. Cook until wilted.Take skin of cod, (I like to cut it in pieces before I plate it but have it however you like), peel the avo and bring all the ingredients together on a plate!
