Seabass with Bifröst Veggies & Rice

Bifröst is the burning rainbow in Norse mythology that reaches from Midgard, where humans live, to Asgard, where the Gods live. The veggies and spices in this recipe come in the colours of the rainbow, hence the name! Different colours give different goodness, so we are getting extreme greatness in this wonderful recipe. We are off to Asgard!

Ingredients
  

  • Drizzle of olive oil/rapeseed oil/coconut oil
  • 100 g brown rice
  • 500 ml water
  • 1 clove of garlic, crushed
  • 180 g Seabass fillets
  • 1/2 red onion, finely chopped
  • 6 stalks of asparagus, chopped in half
  • 60 g green beans
  • 1/2 a yellow pepper, sliced
  • 1 tsp ground turmeric
  • 40 g green cabbage, washed and cut into finger-length pieces
  • Season salt & pepper
  • Sprinkle of chilli flakes

Method
 

  1. Rinse the rice, then drain and place in a pan. Cover with the water and bring to the boil. Lower the heat to a simmer, cover the pan and cook according to the packet instructions (these can vary), then drain.
    Spread the crushed garlic on top of the seabass fillets (not the skin side). Season with salt and pepper.
    Put 1 teaspoon of oil into a frying pan and place on a medium heat. When the oil is hot, add the seabass to the pan, skin side down. Cook until crisp, then turn. It should take about 8 minutes in total.
    Put another teaspoon of oil into another pan on a medium heat, and when hot, add the red onion, asparagus, green beans, yellow pepper, turmeric and chilli flakes. Stir for 2 minutes, then add the cabbage and the cooked rice. Cook, stirring gently, until heated through.
    Serve the seabass on top of the rice and rainbow vegetables.
