Tuna & Cashews

Cashews are low in sugar and rich in fibre, heart-healthy fats and plant protein.

Ingredients
  

  • Drizzle of olive oil/rapeseed oil/coconut oil
  • 1 tuna steak, approx 150g
  • 1 tbsp green pesto
  • 10 cashews, chopped
  • Handful of kale
  • 1/2 avocado
  • Season Cajun powder
  • Season salt & pepper
  • 1 lemon, squeeze the juice over

Method
 

  1. Pre-heat oven 180. Tuna to a tray, add the oil, the juice, the cajun powder and salt & pepper.
    Into the oven, cook for 4 min, then turn and cook for another 4 min.
    While the steak is cooking, finely chop the cashews and mix with the pesto. Cut the avocado into slices.
    Lastly, drizzle of oil to a pan, and sauté the kale, will be quick, until its little brown on the ends and crispy.
    Kale to a plate, at the tuna steak, then avocado on top, and finally the pesto and the cashews.
